Sobrassada is a type of soft raw sausage traditional for the Balearic Islands in Spain. It's used more as a pate than as a sausage and is made from minced pork from free-range pigs, smoked paprika, salt and other spices. The hardening of the sausage necessarily takes place under certain meteorological conditions of high humidity and mild cold, typical of the late Balearic autumn. We recommend serving it as a spread on crispy bread or crackers, in pasta sauce, as well as in cooking for added spiciness.
