Salchichón is a dried sausage made from thin pieces of pork mixed with Iberian fat for greater smoothness on the palate. The meat is seasoned with salt, pepper, nutmeg, oregano and garlic and then dried for about 3 months. The taste of salchichón has a slight sweetness thanks to the combination of spices and hardening time. The term "Cular" refers to the type of shell - it's thicker for maximum protection during the hardening process, favouring the concentration of aromas and flavours.
