''Queso San Simón da Costa'' is a soft cheese made from pasteurised or unpasteurised cow's milk in Galicia. After curdling, the cheese is given a pear-like shape and matures between 30 and 45 days, after which it is smoked with birch wood. The inside of the cheese is slightly firm and the texture is creamy. There are small irregular bubbles in places. Its taste is mild, with hints of spices. It has a very small fat and salt content.
