This ''Queso Mezcla Semicurado'' is a semi-hard cheese with 51% fat, made from a mixture of pasteurised cow's, goat's and sheep's milk. Each of the milks used contributes to the taste of the cheese - the cow's milk provides the basis of taste and a hint of acidity, the goat's milk gives the cheese its white colour and a light spicy taste and the sheep's one improves the taste, aroma and fat content.
