This semi-hard ''Queso Manchego Semicurado'' is made from 100% raw milk from the Manchego sheep in the La Mancha region and matures between 3 and 5 months. It has a rather firm texture and an oily, creamy texture, and often contains small, unevenly distributed air bubbles. Its taste is specific and well-developed, but not too strong, with a slight spiciness and an aftertaste typical of sheep's milk.
