This ''Queso de Oveja Viejo'' is a hard, dry cheese made from the best raw sheep's milk in the Castilla y León region and ages for at least 7 months. It has a certificate for Castilian cheese. The texture of the cheese is firm, but at the same time oily and it melts in the mouth. In places there are small, uneven air bubbles. It has a highly intensive taste that "fills the mouth”, but at the same time remains balanced, and has a light fruity and nutty aroma.
