Jamón

Jamón is one of the most consumed meat delicacies in Spain which can be defined as a type of dried ham. It's produced in two varieties - jamón Serrano, literally - "jamón from Sierra"- which is made from white pig, and jamón Iberico which is made from prairie Iberian pig.

Salchichón

Salchichón is a type of raw dried pork sausage with bacon, flavoured with black pepper and a bouquet of spices that vary according to the recipe - oregano, nutmeg, garlic and others. It's similar to chorizo, the main difference being the red pepper which is not added to the salchichón.
